Introducing Adam and Sandy – The Farmers who went to Market
As working farmers from the Scottish Borders, Adam Marshall and Sandy Pate had the simple yet brilliant idea of bringing their quality natural product from the farm to the city. Passionate about good honest food they introduced a very different food concept to Edinburgh with their fresh and delicious Scottish hog roasts.
Coming from families who have farmed in Berwickshire for many generations they also run Reiver Country Farm Foods as well as successful butcher shops in Berwick upon Tweed and Duns so they know a thing or two about good meat. They began specialising in hog roasts in 2000 and brought their freshly carved hog roasts to the Edinburgh Farmers Market at Castle Terrace in 2001 (in fact they are the only business to have attended every single Saturday ever since.) Their delicious hog roasts were such a runaway success with the public at the Farmers Market that they decided to open their very first shop in Edinburgh – and that’s when Oink was born.
Oink was launched in the Summer of 2008 and delivers a high quality fast food alternative in Edinburgh’s Victoria Street that people absolutely love. Oink have been feeding hungry workers, local residents, students, festival goers, shoppers and tourists with their hog roast rolls 7 days a week ever since !
At the same time they also developed their hugely successful Oink outside catering business where they go the whole hog and bring their delicious hog roasts direct to events and parties for up to 500 people right across the country.
Oink has gone from strength to strength and are proud to be ranked as Number 47 out of 1088* restaurants in Edinburgh by Trip Advisor. (*changing daily)
